Artisanal Shrimp Pizza
Ingredients
- 1 Precooked Pizza Crust I love Schar pizza crusts!
- 12 Shrimp raw, thawed, peeled & deveined
- 4 Ounces Shredded Mozzarella low moisture
- Goat Cheese
- 1/2 Large Portabella Mushroom thinly sliced
- 8 Cherry Tomatoes
- Garlic Salt
- Black Pepper
- Oregano optional
- Olive Oil Or Cooking Spray
- Chipotle Sauce try my recipe, it’s easy & delicious
Salad
- 5 Ounces Spring Mix Salad I use the whole carton
- Balsamic Dressing
- Red Onion thinly sliced
Instructions
- Preheat the oven to 410 degrees.
- Prep the shrimp. Defrost if frozen. Peel & devein.
- Make the chipotle sauce recipe; skip if you made it ahead of time or if you’re using store bought.
- In a mixing bowl, toss the mixed green, red onions, with a generous about of balsamic dressing. Then transfer the salad to a serving dish or platter or large plate. Please do not use a plastic or paper plate because we will be adding the hot pizza directly from the oven.
- Lightly sear the mushrooms and tomatoes. This removes some of the moisture ahead of time, so the juices don’t make the pizza soggy. I used a cast iron pan on medium high heat, with a tiny bit of olive oil.
- Place the pizza crust on a lightly greased pizza pan or sheet pan and then assemble toppings.
- You can add the chipotle sauce on the pizza as your sauce base, or skip this step & just do the drizzle, or do both! Sauce base and drizzle!
- Add the mozzarella, then the mushrooms, tomatoes, and raw shrimp. Place several big chunks of goat cheese randomly around the pizza. Season with garlic salt, black pepper, and oregano.
- Bake in a 410 degree preheated oven for 15 minutes.
- When pizza is done cooking, immediately AND carefully cut it into 8 slices. Then place the HOT pizza on top of the salad. We want the heat of the pizza to slightly wilt the salad.
- Drizzle chipotle sauce over the top, and enjoy!
Notes
For this recipe I use red shrimp or rock shrimp because they almost taste like lobster. You can use any kind of shrimp or if you’re feeling fancy try lobster! Whether you use shrimp or lobster, assemble the pizza with raw (defrosted) shrimp/lobster, as it will cook in the oven. Precooked shrimp or lobster will result in a stringy & overcooked texture.
Chipotle Aioli Sauce
Spicy, Smokey, Creamy, & a Touch of Sweetness
Equipment
- Blender or Food Processor
Ingredients
- 1 Can Chipotles in Adobo
- 1 Cup Sour Cream
- 1/3 Cup Mayo
- 1/2 Cup Milk
- 2-3 Cloves Garlic
- 1 Tbs Maple Syrup or Honey
- 1 Tbs Lemon Juice
Instructions
- Blend the whole can of chipotles and adobo. Pour chipotle purée into a separate container.
- Add sour cream, mayo, milk, maple syrup, lemon juice, and garlic to the blender and blend until well combined.
- Slowly start incorporating the chipotle purée, for mild heat add 2 tbs of chipotle purée, blend, taste, & repeat until your preferred level of spiciness is achieved. For medium heat, use approx 1/3 of the chipotle purée, blend, taste, add more if you want it spicier. For very spicy, start with half of the chipotle purée, blend taste, repeat if necessary.
- If your sauce is too spicy, add a little more milk, sour cream, & mayo.
Notes
This sauce is great on so many things! Drizzle over fish tacos, burgers (fry sauce) potatoes, pizza, veggies, or salads. Hope you enjoy!
