Beef Tacos
Ingredients
For the Beef
- 1+ Lbs Ground Beef Chuck lean ground will be too dry
- 2 Cups Beef Broth
- 1 Tbs Tomato Paste or ketchup
Taco Seasoning Blend
- 2 Tbs Chili Powder
- 1 Tspn Paprika I use smoked paprika
- 1 Tspn Cumin
- 1 Tspn Garlic Powder
- 1 Tspn Onion Powder
- 1 Tspn Oregano
- 1 Tspn Cayenne use 1/4 Tspn if you don’t like it spicy
Taco Assembly
- 12+ Corn Tortillas more or less depending on how much meat you use
- Toppings: Lettuce, Tomato, Onion, Cilantro, Sour Cream (or Crema Mexicana), Avocado, Lime, Queso Cojita (or shredded cheese of choice), Hot Sauce (I love Cholula, great flavor not too spicy), etc
Instructions
- On high heat, brown up the ground beef chuck until almost done. It should still have a little bit of pink pieces. Carefully strain (I use a mesh strainer) and return to pan.
- Add the broth, tomato paste, and taco seasoning blend. Stir well. Bring to simmer and reduce heat to medium low. Cook uncovered for at least 20 minutes (I usually do 30+ minutes). Keep an eye that it doesn’t run out of liquid.
- Simmering the beef in broth with seasonings, will give the beef a chance to render off the fats, and for the flavors to develop.
- While the beef is simmering, prepare your favorite taco toppings.
- About 10 minutes before you are ready to eat, warm up the tortillas. In a preheated skillet or pan on medium high heat warm the tortillas for approx 10 seconds per side. Wrap in a cloth or paper towels and cover.
- Strain off any remaining liquids from the beef, transfer to a bowl, and serve with a slotted spoon.
