House Special Fried Rice
Ingredients
- 4+ Cups Leftover Rice must be cooked at least one day beforehand
- 4 Eggs
- 1 Lb Steak I use beef for stew
- 1 Lb Boneless Pork Chops
- 1 Lb Shrimp
- 4 Cloves Garlic sliced
- 1 Yellow Onion sliced
- 16 Oz Matchstick Carrots
- 16 Oz Frozen Peas
- 3 Green Onions cut into 1 inch slices
- 4+ Oz Soy Sauce check for gluten free
- 2 Oz Fish Sauce check for gluten free
- 2-3 Tspn Sesame Oil
- High Heat Cooking Oil vegetable, canola, avocado, etc
Instructions
- Make the rice 1-2 days beforehand. Fresh rice will not fry, it will get mushy.
- Prepare the protein for marinading. Cut the pork and beef into one inch cubes. Add the pork, beef, shrimp, onion, and garlic to a ziplock or Tupperware. Pour in approximately two ounces of soy sauce and two ounces of fish sauce. Mix well and refrigerate overnight or for at least one hour before cooking.
- Just before cooking, remove the shrimp from the marinade and set aside. Shrimp cooks very quickly, so we will add it in towards the end of the stir fry.
- Heat a wok (or any large pan) over high heat. I cook this outside because my kitchen is not well ventilated. Work in small batches so the food can fry, if overcrowded it will steam and the rice can become mushy. It will take 2 or 3 batches depending on the size of your wok/pan.
- Add cooking oil to the hot wok/pan. Add some of the marinaded pork, steak, onion, and garlic. Stir fry for a few minutes until the meat is seared, not cooked through.
- Move the meat to the sides of the wok/pan, add a little more oil, then add about 1-1.5 cups of rice. Spread the rice out in the center of the wok/pan and let it fry undisturbed for a few minutes. Checking frequently to see when it starts to become golden.
- Mix the rice and meat, then make a well in the center of the wok/pan. Add a little cooking oil and add one or two eggs. Stir fry just the eggs, until they are almost done.
- Add some of the shrimp, carrots, peas, green onion, 1 teaspoon of sesame oil, and 1-2 ounces of soy sauce. Stir fry until the shrimp is cooked (approximately 5 minutes).
- Serve with Sriracha if you like spice. Hope you enjoy!
