Quick Chicken Soup
Quick and easy recipe perfect comfort food for days you don’t feel well.
Ingredients
- 1.5 Lbs Chicken Boneless or Bone-in
- 4 Cups Chicken Broth
- 1 Small Onion diced
- 1 Celery Heart chopped
- 16 Oz Carrots chopped
- 3 Cloves Garlic minced
- 1-2 Tbsp Olive Oil
- Salt & Pepper
- 1 Tsp Turmeric optional
- 2 Bay Leaves optional
- Parsley Garnish optional
Instructions
- Season the chicken with salt and pepper. Preheat your pot on medium high heat. Add olive oil and brown chicken, approx 4 min per side. Remove the chicken, set aside
- Turn Heat to Medium Low. Add onions, garlic, & bay leaves. Cook until fragrant, around 3 minutes.
- Stir in broth & turmeric (optional) loosen any brown bits, that adds a depth of flavor.
- Return the chicken to pan, cover. Simmer until chicken is cooked (internal temperature 165•) Bone-in chicken approx 15-20 minutes & boneless approx 10 minutes.
- Remove chicken, set aside until cool enough to chop.
- Add carrots & celery, cover. Simmer until carrots are tender. Approx 10 minutes.
- Add chopped chicken back in the soup when the veggies are done. Add salt & pepper to taste. Garnish with parsley. Enjoy
