Sundried Tomato Alfredo
Ingredients
- 1 Pint Heavy Cream
- 2 Tbs Butter
- 1.5-2 Cups Parmesan Cheese freshly grated
- 1/2 Cup Sun Dried Tomatoes in Oil
- 2 Cloves Garlic minced
- Salt and Pepper to taste
Instructions
- On medium low heat, add butter and the sundried tomatoes. Heat for a about 4 minutes, so the butter can melt and the oil from the tomatoes can combine with the butter.
- Slowly add the cream. Continue cooking on medium low heat until the cream starts to simmer (do not boil), stirring occasionally. Approx 5 minutes.
- Remove the pan from the heat, add the minced garlic, and whisk in the Parmesan. Continue whisking until the cheese is thoroughly incorporated.
- Add Salt and Pepper to taste (approx 1/4 tspn each). Serve and Enjoy!

Notes
I prefer to us freshly grated Parmesan cheese, because it melts better and is not clumpy.
Use 1.5 cups of cheese for a thinner sauce and use 2 cups cheese if you like your sauce thick.
You can add pasta water to thin out your sauce if it is too thick.
