Vegan Curry
Ingredients
- 2 Oz Red Curry Paste approx half the little jar
- 1 Can Coconut Milk full fat has more flavor
- 1 Cup Raw Cashews
- 16 Oz Garbanzo Beans drained & rinsed
- 1 Can Water Chestnuts drained & rinsed
- 8 Oz Snow Peas
- 8 Oz Sliced Carrots
- 8 Oz Shredded Cabbage
- 1 Green Onion (scallion) sliceced
- 1 Tspn Red Pepper Flakes optional
- Rice
Instructions
- Start the rice first, cook according to package instructions.
- Add the curry paste to a large pot and whisk in the can of coconut milk and red pepper flakes (optional).
- Add the cashews, garbanzo beans, and veggies. Give it a stir, cover and simmer until the veggies are softened to you desired texture (approx 10-15 minutes).
- Serve over rice, top with scallions. I like to add sriracha for more spice.
